Ingredients

2 (14 ounce) packages low-fat extra-firm tofu, drained and cubed
• 1/2 teaspoon salt, divided
• 6 cups broccoli florets
• 1 cup orange juice
• 1 tablespoon chipotle chiles in adobo, minced
• 1/2 cup fresh cilantro, chopped
Directions

  1. Place a sizable nonstick skillet over medium-high heat after spraying it with cooking
    spray. 1/4 teaspoon of salt and the tofu should be added. Cook for 7 to 9 minutes, or
    until golden brown on all sides, stirring occasionally. Transfer to a plate, then reserve
  2. Cooking spray should be used again before adding the broccoli and the final 1/4 teaspoon of salt. Sauté the broccoli for 1 to 2 minutes, or until it turns brilliant green.Orange juice and chipotle chiles should be added. Sauté for a further 2 to 3 minutes, oruntil broccoli is barely tender
  3. Return the tofu to the pan and heat it through for a further 1 to 2 minutes. Add the cilantro after taking the pan off the heat.
