2 cups mozzarella cheese
2 tbsp cream cheese
1/2 cup almond flour
1/4 tsp salt
1/4 tsp black pepper
1/4 cup grated parmesan cheese
1 tbsp chopped fresh parsley (optional)
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium microwave-safe bowl, combine the mozzarella and cream cheese. Microwave on high for 1 minute, then stir. Microwave for another 30 seconds, or until the cheese is completely melted and smooth.
Stir in the almond flour, garlic powder, salt, and black pepper. Mix until a dough forms.
Beat the egg in a separate small bowl, then stir it into the dough.
Roll the dough out into a long rectangle on a lightly floured surface, about 1/4 inch thick. Cut the dough into strips, about 1/2 inch wide.
Place the breadsticks on the prepared baking sheet. Sprinkle with grated parmesan cheese and parsley (if using).
Bake for 12-15 minutes or until the breadsticks are golden brown.
Allow to cool for a few minutes before serving.
