Ingredients:
2 tablespoons vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 red bell peppers, chopped
2 tomatoes, chopped
1 can (410g) chopped tomatoes
1 can (410g) mixed beans, drained
2 teaspoons curry powder
1 teaspoon ground cumin
Salt and pepper, to taste
Hot pepper flakes, to taste (optional)
Instructions:

Heat the oil in a large saucepan over medium heat.

Add the onion and garlic and cook until soft and fragrant, about 5 minutes.

Add the bell peppers, fresh tomatoes, canned tomatoes, beans, curry powder, cumin, salt, pepper, and hot pepper flakes (if using).

Simmer for 20 minutes, stirring occasionally, until the vegetables are soft and the sauce has thickened.

Serve hot with rice, bread, or pap (a type of maize porridge).
