Cabbage, Carrot, and Apple Salad
Ingredients
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 large carrot, shredded
- 1 large apple (Granny Smith or Fuji works well), julienned or thinly sliced
- 1/4 cup fresh parsley, chopped (optional)
- 2 tbsp apple cider vinegar
- 1 tbsp olive oil – (can use less for lower points, or use a 0-point dressing)
- 1 tbsp honey or 1 tsp sugar (optional, for a touch of sweetness)
- Salt and pepper, to taste
Directions
- Prepare Vegetables and Apple: In a large bowl, combine the shredded green and red cabbage, shredded carrot, and julienned apple. Toss in the fresh parsley if using.
- Make the Dressing: In a small bowl, whisk together the apple cider vinegar, olive oil, honey or sugar (if using), salt, and pepper.
- Combine and Toss: Pour the dressing over the salad ingredients. Toss everything together until well coated.
- Serve: Serve immediately for maximum crunch or let it sit in the refrigerator for 10-15 minutes to allow the flavors to meld.

- Add Crunch: Top with sliced almonds or sunflower seeds for extra crunch.
