Ingredients:

  • 2 large potatoes, peeled and grated
  • 1/4 cup of all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp of olive oil
  • 4 slices of vegan cheese
  • 4 English muffins, toasted
  • 4 vegan breakfast sausage patties
  • Vegan butter, for spreading

Instructions:

  1. Preheat the air fryer to 375°F.
  2. In a mixing bowl, combine grated potatoes, flour, garlic powder, onion powder, paprika, salt, pepper, and olive oil. Mix well.
  3. Divide the potato mixture into 4 equal parts and shape into patties.
  4. Place the potato patties in the air fryer basket and cook for 12-15 minutes until golden and crispy, flipping them halfway through.
  5. While the hash browns are cooking, heat the vegan breakfast sausage patties according to the package instructions.
  6. To assemble the sandwich, spread some vegan butter on each toasted English muffin half.
  7. Place a slice of vegan cheese on one half of each English muffin.
  8. Add a cooked vegan breakfast sausage patty on top of the cheese.
  9. Finally, place a cooked hash brown patty on top of the sausage patty.
  10. Top with the other half of the English muffin and serve hot.
