Ingredients:
- 2 large potatoes, peeled and grated
- 1/4 cup of all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp of olive oil
- 4 slices of vegan cheese
- 4 English muffins, toasted
- 4 vegan breakfast sausage patties
- Vegan butter, for spreading
Instructions:
- Preheat the air fryer to 375°F.
- In a mixing bowl, combine grated potatoes, flour, garlic powder, onion powder, paprika, salt, pepper, and olive oil. Mix well.
- Divide the potato mixture into 4 equal parts and shape into patties.
- Place the potato patties in the air fryer basket and cook for 12-15 minutes until golden and crispy, flipping them halfway through.
- While the hash browns are cooking, heat the vegan breakfast sausage patties according to the package instructions.
- To assemble the sandwich, spread some vegan butter on each toasted English muffin half.
- Place a slice of vegan cheese on one half of each English muffin.
- Add a cooked vegan breakfast sausage patty on top of the cheese.
- Finally, place a cooked hash brown patty on top of the sausage patty.
- Top with the other half of the English muffin and serve hot.
