Ingredients
3 sweet potatoes large
2 tbsp. oil
Salt and pepper as per taste
For filling (Use as per your choice)
1 small onion chopped
1 cup canned black beans
¼ red pepper chopped
¼ cup cherry tomatoes sliced
½ avocado chopped
handful sweet corn shelled
handful pomegranate seeds
Instructions
Wash and dry sweet potatoes. For best results, choose potatoes of same size for even cooking.
Pinch the sweet potatoes with the fork at least for a 1 cm.
Brush oil on sweet potatoes, season with salt.
Preheat the air fryer at 190 deg C | 375 F for 10 mins. Place them in the tray in a single layer in the preheated air fryer. You may need to cook them in batches depending on your basket size.
Air fry them at 190C | 375F for 22-25 mins.Apply oil once in between
To check if they are done, insert a toothpick and check if it can pierce through. Smaller sweet potatoes will cook faster than bigger sweet potatoes.
Slit in the middle. Add filling as per your choice.
Serve immediately.
